Egg Spinach 'Quiche' with a Cauliflower Crust


So today I was feeling a little creative and decided to try my luck at making a paleo version of a quiche while keeping it low carb to fit my dietary 'lifestyle'. 

I started off by steaming a head of cauliflower for about 20 minutes on high then letting it sit for 15 minutes with the cover on so it gets a little mushy.






I then took about 1/2 of the cauliflower head and mashed it. After that I lined my 12" pie dish with the mashed cauliflower and pressed it down with my potato masher.


I cut up about 2 cups of raw spinach and mixed it in a bowl with 8 eggs, 1/2 tsp of garlic powder, 3/4 tsp of cumin, 1/4 tsp of chili powder, and 1/4 tsp of black pepper.




After everything was all mixed I put it in the pie dish and baked everything at 350F for 35-40 minutes.





It ended up coming out pretty good, I really enjoyed it. It could definitely use some salt if you want though.

Tsurai Green Bean Fries

So today I made a ton of steamed green beans and I decided to take some and try to make a new snack. I call them tsurai green bean fries. Tsurai is the Japanese word for spicy, I wanted to be a little fancy with this one. I used a Japanese word because I know that sesame is used widely in Japanese food.

Ingredients:
200 grams raw green beans
1 tsp of chili powder (I used Nanami Togarashi)
1 tsp sesame oil
1 tsp coconut aminos
1/4 tsp sesame seeds (for garnish)




Prep time:
<5 minutes


Servings:

Preheat your oven to 400F. Clean everything! Add everything except the sesame seeds to a bag and shake. Put the green beans in a pan. Sprinkle on your sesame seeds and bake for 10-15 minutes.

Greens & Whey Smoothie

Sometimes I'll go to Jamba Juice with my friend and get their vegetable & fruit smoothies, I think they're pretty good. I decided to try and make one for myself after my workout.

Ingredients:
1 serving whey protein (I used vanilla)

1.5oz raw kale
1oz raw baby spinach
1oz blueberries
1 packet Stevia
4-6oz water
2-4 ice cubes




Prep time:
<5 minutes


Servings:
1
 

Clean everything! Add spinach, kale, and water to the blender first and blend so they can get...blended properly? Then add blueberries, stevia, and ice cubes.

Just remember, it isn't meant to be delicious. It's meant to nourish your body! ;)

Banana Blackberry Protein Pancakes

I wanted to mix up my post workout eating routine today, so I decided to try to make pancakes using my protein powder.

Ingredients:
2 scoops (3.75 tbsp) protein powder. I used Banana Myo Lean Evolution but you can interchange flavors/brands

1/2 cup egg whites
2 oz fresh blackberries
2 tbsp chia seeds
1/4 tsp cinnamon




Prep time:
5 minutes

Cook time: 
1 minute on each side

Servings:
1 = 3 pancakes.

 

Mix all ingredients in a bowl with a wisk. Heat up your skillet over medium heat and add cooking spray. Pour in just enough batter so that you've almost covered the whole skillet. Cook each pancake for 1 minute on each side.

Kale Chips

It's been so long since I've added something on my recipe blog. Today I'm going to add a recipe for something extremely simple. But first, a very short story. 

Today I'm planning on seeing The Hobbit with my buddy CJ. Since the movie runs for around 3 hours, I was trying to figure out what I would bring with me to eat because I eat roughly every 3 hours. Awhile back I remember my trainer, Shawn telling me that kale chips were really good. So I decided to get to it and make myself a movie snack!

Ingredients:
4 cups chopped kale

1 tbsp olive oil
3/4 tsp sea salt
1/2 tsp oregano 




Prep time:
5 minutes

Cook time: 
10-15 minutes

Servings:
6

Preheat oven to 350F. Line a cookie sheet with parchment paper. Toss your kale in a bowl with the olive oil. Spread the kale onto the cookie sheet then season with your sea salt/oregano. Bake for 10-15 minutes or until the edges are brown, NOT BURNT!

Pete's Strawberry Banana Protein 'Brownies'

Ingredients:
4 scoops strawberry protein powder/ 7.5tbsp (I use Lean Body by Lebrada but any will work.)
1 medium banana, mashed
3 tbsp almond butter
15 tbsp egg whites (.93 cups)



Prep time:
5 minutes

Cook time: 
20 minutes

Servings:
6


Preheat oven to 325. Mix everything together in a bowl with a wisk, try to get all the lumps out. Spray an oven pan and put in your 'brownie' mix. Cook for 20 minutes or until fork/toothpick comes out clean.
Each bar has 180 calories and 17g protein.

Curried Chicken with Sauteed Spinach

Ingredients:
1 1/2 chicken breasts

1 medium onion, sliced

2 cups raw spinach 
2 tbsp water
1 tbsp olive oil

1/2 tsp curry powder

1/4 tsp cumin
1/4 tsp coriander
1/4 tsp garlic powder
1/8 tsp onion powder
1 pinch cayenne pepper
1 pinch crushed red pepper flakes

Prep time:
5 minutes

Cook time: 
15 minutes

Servings:
2



Put a large saucepan over high heat and add olive oil to coat the pan. Mix your powders with chicken and set aside. When the pan is hot enough, add the onions and cook for 5 minutes until translucent. Add chicken and 2 tbsp of water and cook for about 7 minutes then add spinach. Cook for another 3 minutes or until spinach is wilted then set aside and you're done.
